Blueberry Lemon Bread
Recipe Submitted by the Songbird Prairie Bed And Breakfast

2 sticks butter
2 cups sugar
3 cups flour
2 t baking powder
1/2 t salt
1 cup blueberries
2 T fresh squeezed lemon juice
2 T lemon zest
5 large eggs
3/4 cup buttermilk

Preheat oven to 325 butter and flour bundt pan sift flour baking powder salt set aside remove skin from lemon with zester, squeeze lemon through cheesecloth place butter in electric mixer with paddle attachment beat on medium until soft 2-3 minutes add sugar beat until fluffy add eggs one at a time reduce speed to low add flour mixture alternately with the buttermilk end with flour stir in zest and juice. Layer batter and blueberries (dusted with flour) bake 50-60 minutes. Un-mold and drizzle with lemon juice and powdered sugar glaze.
