Inntiquity Inn's Raw Apple Muffins
Recipe Submitted by the Inntiquity, A Country Inn
4 Cups 1/4 inch cubed Granny Smith Apples
2 Cups flour
1 Cup sugar
2 teaspoons baking soda
2 large eggs beaten
1 Cup raisins
1/2 Cup vegetable oil
1 teaspoon salt
2 teaspoons vanilla
1Cup chopped walnuts
In a large bowl mix apples and sugar. In a small bowl whisk eggs, oil, and vanilla.
In a 3rd bowl mix flour, soda, cinnamon and salt.
Stir egg mix into apple mix. Add flour mix and stir until stiff batter. Stir in raisins and walnuts.
Bake @ 325 for 25-30 minutes - Makes 16
