Chocolate Chip Fruit BreadRecipe Submitted by the Ivy House Bed & Breakfast
1/2 cup oil
1 cup sugar
2 cups flour
1 teaspoon soda
1 cup mashed banana
1/4 cup chopped maraschino cherries
1/4 cup chocolate chips
1/4 cup chopped pecans
Mix oil and sugar. Add eggs and mix well. Stir in flour and soda and add banana. Mix in remaining ingredients. Spray 5x9 loaf pan with Pam. Pour mixture into pan and bake at 350 for 1 hour. While warm drizzle with powdered sugar glaze. Yield one loaf.
For the Bed and Breakfast I make it in small loaves. Although you can leave out the chocolate chips it is just not the same. They make the dish.
